We have quite a few recipes that come from my Mom and her childhood in Idaho. There’s her Idaho tacos, heirloom apple rolls, that famous cheesy ground beef and rice casseroleHer recipes are everyone’s favorites and I’m hoping you’ll be as open to this one as you have been to the others.

Whenever it was a day full of running 5 kids from one activity to another dinner had no choice but to take a back burner. There just wasn’t enough time to slave in the kitchen all day. So, Mom would defrost some ground beef, cook it up taco style and then pull out all the fixin’s.

In this case the fixin’s meant Doritos, yes the chips instead of a fried taco shell, lettuce, tomatoes, cheese, and whatever else anyone wanted. Listen, I don’t know why something as simple as using Doritos instead of a tortilla fried to crispy perfection is so good but it is, it adds extra crunch and bold flavor.

Just do it.
