Love these Baked Zucchini Fries!!! They are so delicious. But, let me say this, please please eat them fresh and hot from the oven. They get too soft and soggy and nasty when they cool off. Sorry, they do. Also, serve alongside ranch or we personally love marinara sauce. Hooray for a healthier fry!!!!!

Ingredients 

Recipe By Me

  • 3 Zucchinis, Medium
  • 2 Eggs, beaten slightly
  • 2 Cups Bread Crumbs, Italian Style

Instructions

  • Slice the zucchinis, dip in egg, toss in a bag with bread crumbs and shake to coat.
  • Place on a lined baking sheet and bake at 425 for 20 min or until golden.
  • (Depending on how thick you sliced the zucchini is how long you will bake them so I like to just keep checking them)
