I know that there are many different sandwich recipes out there that use avocado. And I personally cannot wait to try every single one at some point, but as many as I’ve already tried, I keep coming back to the same thing. This darned grilled chicken and avocado napoleon is just danged good. Oh, and did I mention that it uses puff pastry for the “bread”? Guys, seriously amazing. I happen to already have a love affair with avocados like these grilled avocado tacos, these Naked Californians,  Bacon Wrapped Avocados and our ultimate favorite sauce, Honey Avocado dressing, but then to stick them with delicious puff pastry?! WOWZA!

Not gonna lie though, that puff pastry actually freaked me out a tad when I first heard about this sandwich, but when I learned it was a recipe from Giada I knew it had to be the bomb diggity. Say what you will about the size of her head (which I truly don’t know why people hate on her, she’s gorgeous!!! Oh, that’s why. Hello insecurities…)that lady can cook! We love so many of her dishes and this one definitely stays true to the deliciousness.

There’s something about the flaky puff pastry and that spicy mayo all holding in the juicy chicken and avocado that just makes it hard to stop eating. I mean, am I the only one with little to no self control when it comes to good food? And am I the only one that had never heard of a puff pastry chicken sandwich? Gosh, all those years that I was missing out!!! I was a fool. But no longer. I’ve joined Giada’s cool club and who knows, maybe you’ll see me on the food network with her one day…Maybe.
