I don’t know if I even want to admit this to you since we are generally pretty organized people, but I have a major chocolate stash in my house, one that takes up a cupboard and a shelf in the pantry and it’s a huge piled up disaster. I know I need bins, and I’d love to hear how you keep such things organized, but since I have a huge variety, mini chocolate chips, milk, semi sweet, peppermint chip, toffee, andes mint chips, mini m&m, white chocolate, oh my gosh, I’m not even going to keep going because I could! The point is, these chocolate peanut butter delight cookies were born out of pure anxiety, and because I really like those new Nestle Delightfulls filled chocolate chips.
Chocolate anxiety that is. I’m so over the disaster, but we have NO SPACE! Putting bins in takes up so much room that we actually and up losing space and until we move into a home with gobs more food storage I’m stuck and can’t take it anymore! I have a few bags that all needed to be used, and you may have noticed that when I discovered this crazy awesome m&m chocolate cookie recipe a few months ago I’ve been finding new mixins like nobody’s business. I need it all out of the house!
We have chocolate peppermint chip cookies, andes mint cookies, chocolate m&m cookies, chocolate reese’s pieces cookies, chocolate white chocolate cookies and don’t forget chocolate cookies and cream cookies. I know. And the worst part is, it’s not just about trying to get rid of all those half used bags it’s also this dang cookie brain of mine. I can’t stop think of new variations of recipes! I dream of them for heaven’s sake! Cookie addiction? I think I’ve got it. And instead of wanting to be healed of it I kind of just want you to join me. All Darth Vader like. And ps, I’ll never make another Star Wars comment again. Not really my thing, but it came out and I can’t stop it.

Chocolate Peanut Butter Delight Cookies
Chocolate Peanut Butter Delight Cookies
Ingredients
- 3/4 cup butter, softened
- 1/4 cup white sugar
- 1/2 cup brown sugar
- 1 large egg
- 3/4 teaspoon vanilla extract
- 1 cup all purpose flour like Gold Medal
- 1/4 cup cocoa
- 3 tablespoons instant chocolate pudding mix
- 1/4 teaspoon salt
- 3/4 teaspoon baking soda
- 3/4 cup mini chocolate chips
- 1 1/2 cups peanut butter delight chocolate chips
Instructions
- Preheat the oven to 350 degrees.
- Line two baking sheets with parchment paper or silpats.
- In a bowl of a standing mixer, cream the butter until smooth.
- Scrape down the sides of the bowl and add the sugars, beating for 30 seconds or until smooth (this could take up to 60 seconds).
- Add the egg, and vanilla and beat again until smooth.
- In a small bowl, whisk together the flour, cocoa, pudding, salt, and baking soda.
- Add the dry ingredients to the wet ingredients and mix until just combined then add the chocolate chips and fold in.
- Using a cookie scoop to make the perfect ball, scoop the cookies onto the baking sheet.
- Bake for 8-10 minutes and allow to cool for 3 minutes then remove to a cooling rack and repeat with remaining dough.
