Our kids are in love with these cinnamon chip pumpkin spice cookies fresh from the oven and your kids will too once they try them!
This is just plain ridiculous. I can’t stop making new variations of my pumpkin spice cookie. I blame Boys Ahoy. She started it by making those viral rolo pumpkin spice stuffed cookies. My goodness they are delicious. I could eat a barrel of them! Now I’ve got cinnamon chip pumpkin spice cookies for you but if you scroll to the bottom of this post I’ve linked up to all of the other pumpkin spice variations too, some just using the pumpkin spice chips and others with the pudding cookies.
Now I know many of you are like us and you’ve had a hard time finding the pumpkin spice pudding. If you don’t want to drive all over town you can do what we do, we’ve been buying it on Amazon. Yes, pudding in a box, literally. We buy a whole bunch to stockpile for the year and use it in all sorts of desserts like our Pumpkin Spice Sticky Buns and a no bake pie you’ll see in the future.
Why Do Cookies Come Out Flat?
Use half butter and half shortening, or reduce sugar amount.
Butter and sugar make cookies spread.
Check oven temperature accuracy, bake a few minutes more, or increase temperature by 25 degrees.
I wonder who ever thought up this whole pudding in cookies idea. Does anyone know? It really was so smart. Same thing with banana bread. Who was like, well I’ve got these almost rotten bananas, so I guess I’ll make bread! I think it’s so smart!
Can Cookies Be Made Without Eggs?
Use 1/4 cup of unsweetened applesauce in place of one egg in most baking recipes.
Some sources say to mix it with 1/2 teaspoon of baking powder.
If all you have is sweetened applesauce, then simply reduce the amount of sugar in the recipe.
Applesauce is also a popular healthy replacement for oil in many baked goods.
Oh my goodness, I got a little distracted. Which isn’t uncommon. You should hear my conversations with my friend, Krysta. Description
Ingredients
- 1 Cup Shortening
- 3/4 Cup Brown Sugar
- 1/4 Cup White Sugar
- 2 Large Eggs
- 1 Teaspoon Vanilla
- 2 1/4 Cups Flour
- 1 3.4 ounce Instant [Pumpkin Spice Pudding]
Pumpkin Spice Pudding
- 1 Teaspoon Baking Soda
- 1 1/2 Cups Cinnamon Chips
Instructions
- Heat the oven to 350.
- In a mixing bowl, beat the shortening, brown sugar and white sugar for 3-4 minutes.
- Add the eggs, one at a time with the mixer on medium low.
- Add the vanilla.
- In a separate bowl, whisk the flour, pudding and baking soda.
- With the mixer on low, slowly add the dry ingredients.
- Mix until well incorporated.
- Scoop balls onto a cookie sheet and bake for 8-10 minutes.
