I hate eating dinner without my husband, especially this Creamy Sundried Tomato Pasta. Is anyone else the same? It just stinks to prepare a big and wonderful meal and not have him there to share it with me. I adore my children, but it just stinks to work long and hard to prepare dinner and then only you and a 4yr old enjoy it. If Cade worked nights I swear I would probably only make baby German pancakes or some other breakfast food.
Well, the other night. The hubby had a late day for work which meant it was just me and the kids for dinner. I needed to use up some neufchatel cheese (only to remember later that I can’t have dairy right now, woops!) so I came up with this little recipe. It took no thought since it’s a crock pot recipe which is good because I didn’t want to be stuck in the kitchen. I think we will keep it around for those days where dinner is the last thing I need to worry about.
How Do You Know When Pasta Is Done?
Pasta should be cooked to al dente, or firm to the taste.

- 1/2 bottle Dressing, Sun-dried Tomato Salad
- 1 Can Soup, Fat Free Cream of Mushroom
- 2 Oz Neufchatel Cheese
- 1 Can Tomatoes, Diced
- 3 Chicken Breasts
Instructions
- Throw everything (I even threw the chicken breasts in frozen) into the crockpot on low.
- Cook 3-4 hours, pull out chicken and shred it.
- Place chicken back in the crockpot and cook an additional hour.
- Serve over pasta of choice.

I love pasta, is just so easy to make and delicious, I also loved your recipe, and yes I hate cooking dinner for myself, since my little one is 8 months, it really stinks not having hubby there to compliment my cooking (lol).
