Crispy Chicken Salad
Sometimes you just need a good Crispy Chicken Salad for dinner. No need to plan and cook a meat, veggie and starch, just throw everything together in a bowl and relax for the rest of the evening. You don’t have to even do a crispy chicken, you could substitute a BBQ chicken or just grilled chicken. It would be healthier too, but I specifically felt like having a crispy chicken salad.
The hubs made this for me and I think he did a perfect job. He decided to do a little seasoning salt and pepper in the breading and it added so much yummy flavor to the chicken. The chicken was actually really moist too! Way to go Cade! I love your yummy dinners!!

Crispy Chicken Salad
Ingredients
For the Chicken
- 3 Chicken Breasts Boneless Skinless
- 2 Cups Flour
- 1 1/4 Teaspoons Pepper
- Lawry's Season Salt
- 2 Eggs
- Peanut Oil For frying
For the Salad
- Red Leaf Lettuce
- Sweet Corn
- Bacon cooked and chopped
- 3 Roma Tomatoes chopped
- 1/2-1 Can Black Beans drained and rinsed
- Shredded Cheese of choice
- Cilantro Ranch Dressing or dressing of choice
Instructions
For the Chicken
- Beat eggs slightly.
- Sprinkle season salt on each side of the chicken.
- Mix the flour and pepper together and dip chicken in the flour, shaking off any excess.
- Dip the chicken in the egg and back into the flour.
- Heat oil to 350 degrees. (He filled the fryer about 1/4 the way full so that the chicken wasn't floating in tons of oil, but still got fried)
- Cook the chicken until done, about 6-10 min depending on the size of the breast.
- Let cool and slice into strips.
Assembling the Salad
- Toss everything together and top with chicken strips!
