It can be a little annoying to always have the correct chocolates on hand for baking/cooking. Sometimes I’ll decide to make brownies only to realize that I am just short on bittersweet chocolate or that I had forgotten to put baking cocoa on the list and don’t quite have enough. I hate to always be running to the store for something and it’s more expensive to shop that way. I have found some easy chocolate substitutes for those “Crap, I don’t have enough” moments.

~Substitutions~

Cocoa Powder 
1 oz unsweetened chocolate (1 square)=3 Tbsp. cocoa+1 Tbsp butter (or some other fat, like margarine or shortening) 
Chocolate morsels, semi-sweet
Equal amount of semi-sweet chocolate, chopped

Chocolate, semi-sweet – 1 square (1 oz.)
3 Tablespoons chocolate morsels; OR 1 square (1 oz.) unsweetened chocolate plus 1 Tablespoon sugar

Chocolate, semi-sweet – 6 oz.
6 Tablespoons unsweetened coca powder plus 7 Tablespoons sugar plus 1/4 cup fat

Chocolate, sweet baking – 4 oz.
1/4 cup unsweetened cocoa powder plus 1/3 cup sugar and 3 Tablespoons butter or shortening

Chocolate, unsweetened – 1 oz.
3 Tablespoons unsweetened cocoa plus 1 Tablespoon shortening or vegetable oil
