Dijon mustard is made with low acidity liquids—most commonly white wine—and utilizes the hotter brown and/or black mustard seeds.

Dijon mustard has a sharp, strong flavor.

Yellow mustard is usually made with lighter colored mustard seeds and vinegar is the added liquid.

Yellow mustard has a tart, milder flavor.

You can substitute yellow mustard for dijon mustard, but it has a much milder flavor.

You could use spicy brown mustard instead of dijon mustard.

Or, you can substitute a little horse radish root, honey and sour cream.
