This is not as crazy as it seems. Doritos taco salad is not your typical #tacotuesday meal as there are chips other than corn involved, but just trust me.
Is Taco Salad Low Carb?
For the most part, the salad is fairly low carb.
However, a lot of recipes call for beans and high carb chips.
It’s popular to serve a taco salad in a crispy shell.
Beans and chips add carbohydrates, making taco salad fairly high carb.
We have quite a few recipes that come from my Mom and her childhood in Idaho. There’s her Idaho tacos, heirloom apple rolls, that famous cheesy ground beef and rice casserole. Her recipes are everyone’s favorites and I’m hoping you’ll be as open to this one as you have been to the others.
Whenever it was a day full of running 5 kids from one activity to another dinner had no choice but to take a back burner. There just wasn’t enough time to slave in the kitchen all day. So, Mom would defrost some ground beef, cook it up taco style and then pull out all the fixin’s.
Can You Make Taco Salad With Chicken?
Yes, grilled, baked or left over chicken is a good alternative for taco salad.
Just season the chicken with taco spices if you desire, and shred or cube before adding chicken to salad.
In this case the fixin’s meant Doritos, yes the chips instead of a fried taco shell, lettuce, tomatoes, cheese, and whatever else anyone wanted. Listen, I don’t know why something as simple as using Doritos instead of a tortilla fried to crispy perfection is so good but it is, it adds extra crunch and bold flavor.
Just do it.
How Long Will Taco Salad Keep?
Did the salad get made up and then refrigerated right away and you just have some leftover?
If this is the case then it should easily last 3-4 days.
However, the chips will become soggy, so do not add chips till you are ready to eat.

Ingredients
- 1 Bag Doritos
- 1 Head Romaine, chopped
- 2 Tomatoes, chopped
- Cheddar Cheese, grated
- Sour cream
- [Ranch for dressing]
For the Meat
- 2 Teaspoons Oil
- 1/2 Onion, minced
- 1 lb Ground Beef
- 2 cloves Garlic, minced
- 2 Tablespoons Chili Powder
- 1 Teaspoon Corn Starch
- Tablespoon Cumin
- 1/4 Teaspoon Ground Coriander
- 2 Teaspoons Salt
- 1/3 Cup Beef Broth, or water
Instructions
- In a small bowl, whisk together the chili powder, corn starch, cumin, coriander, and salt.
- Set aside.
- In a large skillet over medium heat, add the oil and heat until shimmering.
- Add the onion and cook, stirring occasionally until tender, about 3 minutes.
- Add the ground beef and begin to cook, stirring to break up the meat, about 2 minutes.
- Add the garlic and cook for one minute.
- Add in all of the seasoning and broth and cook until thickened slightly and the beef is cooked through, about 5 minutes.
- Arrange the chips on a plate. Top with meat, lettuce, tomatoes, cheese and any other toppings and serve with homemade ranch (link is in the ingredients list above)
