Fiesta Rice



So, this is the fiesta rice that I served alongside the Honey Lime Chicken. Have I mentioned how much I love that chicken? Anyway, this rice is quick and flavorful which is a pretty wonderful combo. It had been such a long day and I had no desire to make a bunch of sides to go with the chicken so I kinda wanted something that could just be thrown onto the plate and eaten together. This worked out perfect.


I don’t really have much to say today. I’m tired. I have a load of laundry to fold, kitchen to clean and kids to get ready for bed. Yes, I write these posts ahead of time. I have 2 kids and there just isn’t time for me to sit down and write during the day. How do you other mommies get it all done without getting so tired? You’re amazing. That’s all. Just amazing.


Is Rice Gluten Free?

There are several good substitutes for rice.

Red or white quinoa is the most popular substitute for rice.

Cauliflower rice, barley, (although barley has gluten), and couscous are also good substitutes for rice.

Fiesta Rice

Recipe adapted from Cook's Country

  • 1 Can Black Beans Drained
  • 1 Cup Frozen corn thawed
  • 1 Large Tomato chopped
  • 1/4 Cup Cilantro chopped
  • 1/4 Cup Lime Juice
  • 1 Tablespoon Olive Oil
  • 1/2 Teaspoon Honey
  • 1/4 Teaspoon Cumin
  • Salt and pepper to taste


  • Combine the olive oil, honey, lime juice, cumin, salt and pepper in a bowl with a whisk.
  • Whisk until smooth and set aside.
  • Heat a skillet over medium heat and drizzle a little olive oil in.
  • Cook the corn until warm and beginning to have brown spots.
  • Toss everything else together with the corn and serve over white rice.

  1. Yum, especially the cilantro! I think I could eat just the Fiesta Rice for dinner by itself.

    I have two kids also. It's a challenge to keep up on a blog! I'm trying to post twice a week. Once I post I stop worrying about it for a couple of days. I also try to only post when they are in bed. It doesn't always work out that way, but I try.
