Last summer we attended our nephew’s birthday party which was so fun, and full of more mosquitoes than I have ever witnessed. They ate us alive and the men had to hurry off to the closest stores to buy up all of the bug spray we could. Since then I’ve decided that mosquitoes are of the devil. Is there any purpose other than to destroy us? Thankfully they did not get the frito salad.
It was our saving grace. We gathered around the picnic tables to enjoy a bunch of delicious food. One dish in particular was my favorite. This frito salad recipe is by Carole Carlson and I’m so grateful she was willing to share the recipe with all of you.
You can add or substitute whatever you would like, you really can’t go wrong with this dish. And the best part, you can mix the whole thing an entire day before and then add the fritos right before serving. Your next bbq you wont have to stress over what side to bring, just whip up frito salad!

Frito Salad

Ingredients
- 2 small bags Fritos, 1 chili cheese for extra flavor
- 1 Bottle Catalina Dressing
- 1 Can Olives , sliced
- 1 Can Chili Beans and Sauce, do not drain
- 2 Cups Grated cheese
- 1 Packet Taco Seasoning , to taste, we use the entire packet
- 1 Tomato, chopped
- 1 1/2 Cups Corn
- 1 Bell Pepper, chopped
- Cilantro, for garnish
Instructions
- In a large bowl, stir together everything but the chips.
- Refrigerate if you are not serving immediately otherwise stir in the fritos and serve.

We love to serve it with bbq chicken, brats, or even burgers! If it’s during the year and grilling isn’t possible we love a pulled bbq chicken in the slow cooker or any pulled meats actually!

I sometimes serve it with medium rare rib eye steak and baked potato or corn on the cobb.
Or make the salad a meal itself adding cooked taco meat or grillef chicken cubes and avacodo slices.
