Good golly. It’s like my sweet friend, Karly from Buns in My Oven read my mind when she created her new cookbook, Stack Happy: 70 Fipping Delicious Pancakes for Breakfast, Dinner and Dessert. This little family of mine loves pancakes. LOVES. THEM. We’ve been taking our time letting the girls pick out a recipe a week to try and so far their favorite recipe is this one, Glazed Donut Pancakes.
In case you haven’t noticed, I do not talk about cookbooks all that often. There are millions out there and many are not worth your money. In fact, a lot, a lot. But, some are and not only are they worth the money, but they are kind of awesome for a few extra reasons other than feeding your own family. This book is the perfect example. I love finding unique gifts for people, Stack Happy would be perfect for a wedding gift (totally fun and encourages the couple to slow down and still enjoy breakfast together as newlyweds), a fun family gift for the holidays or even for kids. How much fun would it be for your little one to start learning to cook with a pancakes cookbook? They would love it!
I know, I’m gabbing way too much, but really, Karly you did an amazing job and I hope everyone clicks that link above and orders a book themselves. And while you all do that I’ll be having another pancake for lunch because I’m the mom now and I can do that. 😉
Can You Make Waffles With Pancake Batter?
Pancake batter can be used to make waffles, but you will need to add a couple of ingredients.
For pancake mix to take form and not stick as they become waffles, they just need a little extra fat in the mix.
Add about 1/4 cup of oil to pancake batter to make waffles.
Can You Make Pancakes Without Eggs?
Use 1/4 cup of unsweetened applesauce in place of one egg.
You can also use mashed banana in place of eggs.
Can Pancakes be Reheated?
Pancakes are great reheated.
You can keep left over pancakes in the refrigerator or even freeze them.
To reheat, wrap in foil and place in a toaster oven or regular oven until hot.
Or, heat a stack of pancakes in the microwave.
Frozen pancakes can even be popped into the toaster and heated from frozen.

Glazed Donut Pancakes
Glazed Donut Pancakes
Ingredients
For the Pancakes
- 1 Cup Flour
- 1 Tablespoon Sugar
- 1 Teaspoon Cinnamon
- 1 Teaspoon Baking Powder
- 1/2 Teaspoon Baking Soda
- 1/4 Teaspoon Salt
- 1 Cup Buttermilk
- 1 Large Egg
- 2 Tablespoons Vegetable Oil
- 1 Teaspoon Vanilla
For the Glaze
- 2 Cups Powdered Sugar
- 2 1/3 Tablespoons Milk
- 1 Teaspoon Vanilla
- Sprinkles
Instructions
- Heat a large griddle over medium heat.
- In a bowl, combine the flour, sugar, cinnamon, baking powder, baking soda and salt.
- In a separate bowl, whisk the buttermilk, egg oil and vanilla.
- Using a wooden spoon, stir the pancakes until just incorporated. Do not stir out the lumps!
- Lightly grease or butter the griddle and pour 1/4 cup of batter onto the griddle.
- When bubbles begin to form and pop, about 2-3 minutes, flip the pancakes and cook until golden on the other side.
- Allow to cool slightly then using a bottle cap or donut hole cutter, cut the centers out of the pancakes and dip both the "donut" and "hole" in the glaze.
- Top with sprinkles and serve!
For the glaze
- Whisk all of the ingredients in a medium bowl and set aside.
