I think we can all agree that combining chocolate and peanut butter is always a good idea. Then if you throw them in to some cookie bars it just becomes all sorts of magical.
Blondies have always been one of my favorite desserts because it combines chocolate chip cookies and brownies. I decided I wanted to add some creamy peanut butter to my classic recipe to create an even BETTER blondie.
The recipe is incredibly simple and has short ingredient list. One of the best parts of this recipe is that it is gluten-free, but you seriously would never know it. I am 100% gluten-free for health reasons but I still strive to create delicious treats that everyone can enjoy.’

Gluten-free flours include coconut flour, basic gluten-free flour, sprouted flour, oat flour, rice flour and more — each packed with unique benefits and nutritional value.
Oat Flour
I chose to use oat flour for this recipe because the sweet flavor really complements the peanut butter. It is a super accessible and affordable gluten-free flour for you all to find.

Gluten-free Chocolate Chip Peanut Butter Blondies
Description
Ingredients
- 1 stick unsalted butter, room temperature (1/2 cup)
- ¾ cup creamy peanut butter
- ½ cup light brown sugar
- 2 tsp vanilla extract
- 2 eggs
- ½ cup oat flour
- ½ tsp baking soda
- 1 tsp salt
- 1 cup chocolate chips
- 2 oz melted chocolate, optional drizzle
Instructions
- Preheat oven to 350 and grease an 8x8 pan and line with parchment paper.
- In a large bowl add the butter, peanut butter and sugar and beat with a hand or stand mixer for 1-2 minutes or until mixture is fluffy.
- Add the vanilla and the eggs one at a time and mix until incorporated.
- Add the flour, baking soda and salt and mix and then add the chocolate chips and mix until just incorporated.
- Spread the batter in the baking dish and smooth the top.
- Bake for 25-28 minutes.
- Let cool completely before cutting. Drizzle with melted chocolate if desired.
