Gluten free Chocolate Chip Peanut Butter Blondies

These Gluten free Chocolate Chip Peanut Butter Blondies are so delicious and incredibly easy to make. Guaranteed to be a crowd pleaser.

Hey everyone! Jessi from Jessi’s Kitchen here! I am super excited to be sharing a recipe over on the wonderful Oh Sweet Basil.

I think we can all agree that combining chocolate and peanut butter is always a good idea. Then if you throw them in to some cookie bars it just becomes all sorts of magical.

Blondies have always been one of my favorite desserts because it combines chocolate chip cookies and brownies. I decided I wanted to add some creamy peanut butter to my classic recipe to create an even BETTER blondie.

The recipe is incredibly simple and has short ingredient list. One of the best parts of this recipe is that it is gluten-free, but you seriously would never know it. I am 100% gluten-free for health reasons but I still strive to create delicious treats that everyone can enjoy.’

What Kinds of Flour are Gluten Free:

Gluten-free flours include coconut flour, basic gluten-free flour, sprouted flour, oat flour, rice flour and more  — each packed with unique benefits and nutritional value.

Oat Flour

I chose to use oat flour for this recipe because the sweet flavor really complements the peanut butter. It is a super accessible and affordable gluten-free flour for you all to find.

Do Gluten Free Brownies Taste Good?

For traditional baked goods, bakers usually use only one flour—wheat flour, which contains gluten.

As gluten heats, it expands, capturing the carbon dioxide released during the leavening process.

“Gluten is what holds baked goods together and gives them structure and springiness.”

Without gluten, baked goods can be dense or gummy.

So a lot of trial and error goes into creating gluten-free recipes that mimic the taste and texture of traditional baked goods.

Can You Freeze Gluten Free Blondies?

Most gluten free cakes and brownies will also freeze well: slice the cake and wrap the slices separately OR freeze the cake whole and then wrap it well in plastic wrap to be used for an event later.
