 Game Day Snack Ideas

5 Minute Garlic Hummus and Mini Green Goddess Sandwiches

5 Minute Garlic Hummus and Mini Green Goddess Sandwiches
 Simple but flavorful sandwiches!

Ingredients

5 Minute Garlic Hummus

  • 1 can chickpeas, drained
  • 2 Tablespoons tahini (usually found by the peanut butter)
  • 2 Tablespoons fresh lemon juice
  • pinch of salt
  • 1-2 Tablespoons fresh garlic, finely chopped
  • 1/4 cup olive oil
  • Pitas

Mini Green Goddess Sandwiches

  • 8 Pieces whole wheat bread (remove crust and then cut in half)
  • 2 Avocados, slices
  • 1 Cup fresh spinach leaves
  • 8 Slices of Havarti cheese
  • 1/2 Cup mayo
  • 1 Tablespoon siracha

Instructions

5 Minute Garlic Hummus

  1. Combine ingredients in food processor and blend until consistency is smooth.
  2. If you find the consistency is too thick, add water 1 Teaspoon at a time and then continue blending.
  3. Garnish with additional chopped garlic and some olive oil.
  4. Cut pitas into small triangles and serve with hummus.

Mini Green Goddess Sandwiches

  1. Combine may and siracha in a small bowl.
  2. Take a piece of bread and spread the desired amount of siracha mayo on top.
  3. Layer 1 piece of cheese, 2 slices of avocado, and 3-4 spinach leaves.
  4. Place other piece of bread on top.
  5. Continue until you have 8 sandwiches.
