5 Minute Garlic Hummus and Mini Green Goddess Sandwiches
Description
Ingredients
5 Minute Garlic Hummus
- 1 can chickpeas, drained
- 2 Tablespoons tahini, usually found by the peanut butter
- 2 Tablespoons fresh lemon juice
- pinch of salt
- 1-2 Tablespoons fresh garlic, finely chopped
- 1/4 cup olive oil
- Pitas
Mini Green Goddess Sandwiches
- 8 Pieces whole wheat bread, remove crust and then cut in half
- 2 Avocados, slices
- 1 Cup fresh spinach leaves
- 8 Slices of Havarti cheese
- 1/2 Cup mayo
- 1 Tablespoon siracha
Instructions
5 Minute Garlic Hummus
- Combine ingredients in food processor and blend until consistency is smooth.
- If you find the consistency is too thick, add water 1 Teaspoon at a time and then continue blending.
- Garnish with additional chopped garlic and some olive oil.
- Cut pitas into small triangles and serve with hummus.
Mini Green Goddess Sandwiches
- Combine may and siracha in a small bowl.
- Take a piece of bread and spread the desired amount of siracha mayo on top.
- Layer 1 piece of cheese, 2 slices of avocado, and 3-4 spinach leaves.
- Place other piece of bread on top.
- Continue until you have 8 sandwiches.
