BLEH! I am so tired of thinking up healthy dinners. I am totally in a rut and I’m desperate for your advice. What are some of your favorite healthy chicken recipes? Sometimes healthy recipes are too light and an hour later I’m ready to devour everything in site. I was looking for something that would stick to my ribs a little more and this totally did the trick.

Just spread a little hummus of any flavor (roasted red pepper is on our list to experiment with) on the chicken, sprinkle parmesan cheese on that and then panko on top of that. Drizzle the whole chicken with a little olive oil and bake for 25-30 minutes.

The hash is delicious! It’s really simple too because I don’t want to always be stuck in the kitchen. The hash is easy to make so I’ll include it in the recipe as well. It’s just potatoes, but we normally use sweet potatoes (white or orange), brussel sprouts and carrots. We use a tiny amount of olive oil in a nonstick skillet, sprinkle a little Johnny’s Garlic Spread *we buy it at Costco* and let the whole think get all sauteed and lovely.

  • This sounds delicious except for the brussel sprouts. Any suggestions on what I can use in place of that? Thanks!

    • Hi Linda, I used to despise brussels but I’ve found that they taste so totally different when sauteed. However, you could always do zucchini, broccoli, or any other veggie.

  • I don’t usually do any computer time in the evening but this dish was SO fantastic I had to log in to share our appreciation of this recipe. The hash was spectacular (wish I would have thought it up myself!), the chicken was moist and delicious — this is a definite keeper for us! Everyone, including the three year old, absolutely loved it. I served it with an additional veggie (roasted broccoli) and used roasted red pepper hummus for the chicken. We can’t wait to try it again with a different flavor hummus; thanks so much!!

  • This sounds great, I’ve been looking for easy recipes that are tasty but filling! I can’t get Johnny’s Garlic Spread here, would crushed garlic do?

    • Hi Lesley, I would use a garlic seasoning with parsley if you can find it, but if all else fails use the garlic. 🙂

  • Made this tonight and the hubs and I LOVED it. The chicken was so moist! This is a keeper – I make up a huge batch of hummus each week so with that always in the fridge, I could make this any night of the week. So easy!

  • This sounds fantastic! I love making a fruit salsa to top our grilled chicken. By keeping the ingredients simple, and not adding in sugars or oils, it keeps the dish colorful and flavorful 🙂
