If you’ve ever had our all time favorite berry salad with lemon dressing you know that brown sugar almonds on a salad is like pure heaven for us. We love them. Which is funny because we tend to be the type of people that don’t want nuts in our food, but in a salad they just work. Well, Cade requested I try to make a lemon brown sugar almonds to go in a salad with grilled asparagus one night and who am I to turn down a handsome man?

It was super easy to do. We just added the zest of half a lemon to the brown sugar mixture and left out the cinnamon that we normally use. I honestly thought there was a good chance it wouldn’t work out, but once again, the husband was right. They weren’t at all sour or tangy. In fact it’s this very subtle hint of lemon which is so lovely in a pretty salad. And don’t worry, I’m sharing that salad recipe too as it has turned into one of our favorites as well!

Lemon Brown Sugar Almonds

Lemon Brown Sugar Almonds

Ingredients 

  • 1/2 cup slivered almonds
  • 2 tb butter
  • 1/4 cup or more brown sugar
  • Zest of half a lemon

Instructions

  • In a small bowl, mix the brown sugar and zest.
  • Heat a pan to medium heat and add the almonds.
  • Stir occasionally until the almonds begin to give off a nutty smell and are beginning to turn golden.
  • Add the butter, and allow it to melt then quickly add the brown sugar mixture.
  • Stir until the almonds are well coated and remove to parchment paper (spread out) to cool.
