Let’s talk about lunch and how much it’s the worst meal of the day. Or it was. I’ve become a convert with this low-carb meal prep for lunch with turkey roll ups!
Growing up lunch was just, well lunch. There wasn’t anything special about it. And then I got older and lunch became the worst. In college it was a nuisance to try to squeeze it into my busy schedule, and as a mom, well all of you are already thinking it, but lunch is a hassle. On the one hand I was so hungry while on the other hand there was a busy toddler who couldn’t wait another moment which meant that I was in a hurry to feed one and not myself. Or let’s be honest, the older you get the more a sandwich doesn’t really cut it, but anything more and you’ve wasted precious time.
Low-carb meal prep for lunch with turkey roll ups has changed my life and I’m going to convince you too.
Everyone has been posting about meal prep for quite awhile now, but seeing as how I stay home and didn’t need to haul anything off to work it wasn’t a concern for me. Until I realized that being home is totally work and I was spending way too much time munching on snacks that weren’t that good for me.
Seriously, I’d finish “lunch”, put the little guy down for a nap and was almost immediately back at the pantry shoveling dry cereal, crackers and anything else I could get my grubby little hands on.
I’m pretty sure that isn’t healthy. Contrary to popular belief, you do need to eat more, especially as a mom, the key is to make better choices. I’ve been busting out these healthy lunch meal prep bento boxes, and while I make them lighter I end up eating two in a day because they are good for me.
Marzetti Snack Packs kind of inspired this whole thing. Our oldest daughter loves ranch and carrots in her lunch, but cleaning out the ranch Tupperware wasn’t my favorite. When I saw these (they are now 6pk – 1.5oz cups) snack packs I got them for her and ended up using them for myself. I’d been trying to be more balanced at lunch, protein, dairy, fruit and vegetables.
I’ve never felt so good and stayed more full all day. This whole lunch meal prep thing is genius. So let’s chat about Low-Carb Meal Prep for Lunch with Turkey Roll Ups.
Low-Carb Meal Prep for Lunch with Turkey Roll Ups
First up, I love these turkey roll ups. Sometimes I use a tortilla while other times I stick to just plain turkey roll ups with honey avocado dressing, and any veggies I’d like. I also add string cheese as it’s a great healthier option for cheese and it’s easier than getting out a knife. #winning
I’ve found that turkey roll ups last for 2-3 days if I wrap them in plastic, but only 1 day if it used a tortilla.
Next up, one of my favorites is Greek yogurt with protein powder stirred in and lately I’ve been adding a dollop of homemade almond butter and chia seeds to make it even more filling and pump up the protein even more without making it taste chalky. Fresh fruits and veggies are a must for balance!
Finally there’s the whole hard boiled egg for protein thing that I’ve loved since I was younger. Remember the Deviled Eggs and how I’d make more? Well, this is a healthier option!
Healthy Snacks
Now here’s the best part, while these make a great lunch and you can add as much or as little of the ingredients as you please, but I’ve found that eating a good lunch and then good snack before dinner has helped me maintain a healthy weight and the energy I need to chase, yes chase because apparently little boys are busy, a toddler. I’ve completely ditched my pantry snacking and overeating all day.
I just wanted to help any of you feel like you could do it if you’re hitting the pantry every day, all day like I was.
