You guysssssssssss, oh my goodness this was yum. I can’t wait to try these mango bacon chicken quesadilla with cheese!!!! You’ll remember that I’m dairy, gluten, nut, chocolate, rice, banana, anything gas producing, soy and yeast free right now thanks to a sensitive baby I’m nursing, but it’s totally worth it. Cade’s had cheese, lucky dog.

Some day soon dear friends, some day soon. This is one of those meals that could have turned out totally disgusting. I mean, let’s be honest, it’s not every day you slap mango and cheese together.

But it totally does work. Cade was surprisingly all for this one. He lived in Brazil serving a mission for our church for 2 years and absolutely loves mango, though he claims that mango and avocados here are nothing like the ones in Brazil.

Can You Use Corn Tortillas For Quesadillas?

Both corn and flour tortilla make tasty quesadillas.

Flour tortillas are generally used for quesadillas because they are more pliable.

Is Mango Nutritious?

Mango promotes eye health and boosts the immune system.

Mangoes are packed with Vitamin C and Vitamin A.

How Do You Prevent Guacamole From Turning Black? 

There are three different hints for keeping guacamole looking fresh.

Completely seal guacamole in plastic wrap.

Sprinkle lemon juice on top of guacamole and cover tightly with plastic wrap.

Or, place the pit of the avocado in the center of the guacamole and cover tightly with plastic wrap.

Recipe By Me

  • 1 Chicken Breast, large
  • 1 Teaspoon Chili Powder
  • 1 Teaspoon Cumin
  • 1 Mango, Ripe, peeled and sliced
  • Cheese , Mexican Blend
  • 4-6 Slices Bacon, cooked and chopped
  • 4 Tortillas, Fresh
  • Guacamole, we make ours with 1 avocado, half a tomato, a handful of cilantro, a couple dashes of garlic powder and a few squeezes of lime juice


  • Mix the cumin and chili powder in a dish.
  • Place the chicken breast in the dish and turn to coat.
  • Place the chicken breast in a baking dish and spray the top of the chicken with canola oil nonstick spray to help keep the spices a little more moist.
  •  Place in an oven at 350 for 30 min.
  • Remove the chicken from the oven and let rest for 5-8 minutes.
  • Slice thin and set aside.
  • Cook two tortillas. Once you flip them over, quickly sprinkle with the cheese blend, chicken, bacon, mango and more cheese.
  • Top with the other tortilla and set a heavy pan on top to seal in the goodness.
  • Remove from heat and serve with fresh guac.


reheat in a skillet over medium heat, or place in a 325 degree oven for 10 minutes
