Y’all, we have had a miracle. This Organic Girl teriyaki ginger salad was a major game changer at our house. Let me start at the beginning though. Organic Girl contacted me about trying their 5 Happiness Salad which has, baby bok choy leaves, baby red chard, tango, mizuna, baby arugula, baby spinach, baby green chard, baby green romaine, baby green oakleaf lettuce. So, we got the 100% recycled clamshell of salad mixings and immediately decided to go Asian. As I’ve mentioned before, Little C was such a picky eater and still hates mashed potatoes, but we’ve been working hard on everything else. Greens were definitely the hardest. I mean, she loves our favorite broccoli salad, edamame, Hawaiian pork, etc, but salad is a no go. Or, at least it was.
Cade was going to be home a little later as he didn’t get to the gym at the normal time, and I had been munching on new recipes all day so I definitely wanted something easy and light. I mean, every mom out there knows that there’s a special time right before dinner when no matter how great the day has gone you’ve suddenly got “starving” kiddos (and let’s be honest, you’re ready to eat as well), the house is noisy with kids playing and everything is getting a little crazy. In other words, in just 5 minutes time you all of sudden are ready for the husband to be home. So, teriyaki chicken salad sounded easy, light and delicious for our crazy day. It’s packed with delicious greens, mandarin oranges, almonds, julienned carrots, edamame, chicken and a creamy ginger sauce.
And then we sat down to eat.
Little C totally dove right in. I think it helped that her three favorites were involved, the edamame, oranges and chicken, but either way she actually ate everything. We’ve been working so hard to get her to try new things and eat better and this did it! The greens are so fresh and crisp which I cannot say for all salads you find in the store. Plus it was so yummy!! I feel like Organic Girl needs a huge pat on the back. Thank you for finally bringing all salads into our little one’s life. HOORAY!!!!

Organic Girl Teriyaki Ginger Salad
Organic Girl Teriyaki Ginger Salad
Description
Ingredients
Organic Girl 5 Happiness Clamshell
- 2 Breasts of Teriyaki Chicken, your own recipe or store bought
- 2 Cans Mandarin Oranges, 11oz
- 1/3 Cup Sliced Almonds
- 1 Cup Edamame, shelled
- 1 Large Carrot, julienned
For the Dressing
- 2 Tablespoons Rice Vinegar
- 1 Tablespoon Sugar
- 1 Teaspoon Ground Ginger
- 2 Tablespoons Oil
- 1/4 Teaspoon Soy Sauce
- 1 Tablespoon Mayonnaise
Instructions
- Add the greens, edamame, carrots, almonds and oranges into a large bowl and toss to combine.
- Layer the chicken breast in thin slices over the top.
For the dressing
- Whisk together the dressing ingredients except the oil until smooth.
- Slowly drizzle in the oil while whisking.
- Serve over salad.
