I might as well start by confessing to you that I have a borderline obsession with peanut butter and chocolate. Seriously, I would live off peanut butter and chocolate if I could. And I’m well on my way to trying every combination you can dream up involving these two ingredients. As part of that mission, I recently developed a peanut butter cookies and cream layer cake recipe, which happens to be exactly how these peanut butter cheesecake Oreo brownies came to be as well!
Inspired by leftover Oreos from the cake, and some cream cheese that I happened to have on hand, I wanted to make a cheesecake brownie bar with the same peanut butter, chocolate, and Oreo combo. Cheesecake is one of those things that automatically increases the indulgence factor of any dessert, so I knew it would be the perfect addition to these brownies.
And I’m all about indulgent desserts, so let me tell you about the five layers of goodness in these peanut butter cheesecake Oreo brownies! Naturally, we’re starting off with a base of super fudgy brownies. This recipe calls for both melted chocolate and cocoa powder in the batter because in my opinion, you can never go wrong with more chocolate!
Peanut Butter Cheesecake Oreo Brownies
Second, comes a layer of Oreos. I used straight-up whole Oreos because I just love the look of the cookie baked into each bar. Third, right in the middle, is the creamy peanut butter cheesecake filling, which is then topped with more brownie batter. And finally, we’re covering the top of these brownies with more Oreos (crushed this time) to finish it all off!
You will need to chill these for at least a few hours before they are ready to slice, so you’ll want to plan ahead. Trust me, I know it’s tempting to dig in right when it comes out of the oven. But, I promise, these peanut butter cheesecake Oreo brownies are well worth the wait. Happy baking!

Because these Peanut Butter Cheesecake Oreo Brownies have been baked, it is generally safe to let them stay at room temperature for a day or two, but if we won’t eat them right away, I’ll usually store them in the refrigerator or freezer.

Description
Ingredients
Brownie Layer
- 1/2 cup unsalted butter
- 6 ounces good quality dark chocolate, chopped
- 1/2 cup all-purpose flour
- 1/4 cup unsweetened cocoa powder
- 1/4 teaspoon salt
- 1 cup granulated sugar
- 2 large eggs
- 1 teaspoon pure vanilla extract
Peanut Butter Cheesecake Layer
- 8 ounces cream cheese, softened
- 1/2 cup creamy peanut butter
- 1 egg, beaten
- 1/2 cup granulated sugar
- 1 teaspoon pure vanilla extract
- 1/4 teaspoon salt
For Assembly
- 16 Oreos, whole
- 8 Oreos, roughly chopped
Instructions
Brownies
- Melt the butter and chopped chocolate in a small saucepan over medium-low heat.
- Stir frequently until the mixture is smooth.
- Set aside and let cool for about 10 minutes.
- Meanwhile, whisk together the flour, cocoa powder, and salt.
- Set aside.
- Whisk the sugar into the chocolate mixture.
- Then, add the eggs one at a time, whisking until combined after each addition.
- Add vanilla and stir to combine.
- Fold in the flour mixture using a rubber spatula. Batter will be thick.
- Set aside.
Peanut Butter Cheesecake
- Using an electric mixer, beat the cream cheese on medium-high spead until smooth.
- Add the peanut butter, vanilla, salt, and sugar and mix until combined.
- Add beaten egg and mix until just incorporated.
To Assemble
- Preheat the oven to 350 degrees Fahrenheit and line an 8x8 baking dish with parchment paper.
- Pour approximately 2/3 of the brownie batter into the bottom of the prepared baking dish and smooth with a rubber spatula.
- Layer whole Oreos on top. It will take 16 Oreos to cover the entire brownie layer.
- Cover with the cheesecake batter and smooth it with a spatula.
- Scoop the remaining brownie batter on top and spread it out gently. Swirl slightly with a sharp knife, if desired.
- Top with chopped Oreos.
- Bake at 350 degrees for 40-45 minutes. Cheesecake will be golden brown and middle should only be just slightly jiggly.

Can You Freeze Peanut Butter Cheesecake Oreo Brownies?
Peanut Butter Cheesecake Oreo Brownies, like most other baked goods, can be frozen successfully, though we would be a little cautious on freezing anything which has a cheesecake swirl or layer as these can sometimes “sweat” a little on thawing (they are fine to eat but may feel a little moist on the surface).

Hi Pat, not unsweetened, just a good quality bar of baking chocolate. You’ll find them in the baking aisle, near the chocolate chips. Hope that helps!
