Let’s keep with the peanut butter theme this week, shall we? Remember how last week was National Peanut butter day AND National Pancake day at the same time? Well, here are those way good Peanut Butter Honey and Banana Pancakes we had for dinner. They turned out great. Light, fluffy, a slight hint of peanut butter and all of those delicious bananas. I drizzled honey over mine while Cade went for the buttermilk. I love that syrup soooo much.  I almost licked the spoon until last minute when I came to my senses. OOOOOOH I cannot wait to have Buttermilk syrup again! Don’t you just love BFD? It’s the best.

Description

Ingredients 

Recipe adapted from This Homemade Life

  • 1 1/4 cup flour
  • 1 Tablespoon granulated sugar
  • 1 Tablespoon honey
  • 1 Tablespoon baking powder
  • 1/2 teaspoon salt
  • 1 1/4 cup coconut milk, (or regular milk if you are living the good life)
  • 1/4 cup peanut butter

Instructions

  • In a medium bowl, combine the flour, sugar, baking powder and salt.
  • In small bowl or measuring cup, stir together the milk and peanut butter til smooth.
  • Add to the dry ingredients and beat just until a batter is formed. Do not overbeat.
  • Lightly oil a nonstick pan or griddle over medium heat.
  • Spoon the batter on the pan.
  • Cook until golden brown on both sides.
  • Serve immediately.

Notes

pancakes can be frozen for 3 months
