Peppered Turkey Pesto Panini
For the Sandwich
- Turkey, Peppered, fresh cut from the deli
- 1 Tomato, Ripe
- Bread, Crusty Garlic Loaf (or any Italian bread)
- Olive Oil
For the Pesto
- 1 Cup Basil, Fresh
- 1/3 Cup Pine nuts, Toasted
- 1 Clove Garlic, minced
- 1/4 Cup Parmesan, Fresh, grated
- Olive Oil
- Kosher Salt
For the Pesto
- Place the basil, pine nuts, and garlic in a food processor and pulse until everything is chopped evenly.
- Add parm and sprinkle a little salt and pepper.
- Drizzle in the olive oil while the processor is on until you reach a smooth consistency.
- Spread the pesto over the bread and layer tomatoes, cheese and meat.
- Place the top piece of bread on the sandwich and drizzle with olive oil.
- Place in a panini grill or on a skillet with another heavy pan on the top of the bread.
- Cook until melty!
