We are all getting geared up for the Super Bowl, and I’ll be talking more about healthier snacks on Friday, but I wanted to throw this snack or lunch idea out in preparation for it. You see, as much as we like all of the crazy delicious foods around the holidays and Super Bowl it’s also really nice to have a healthy option or meal in between. I know I’m all about the good food, but it’s such a relief when someone provides something on the lighter side. Even if it’s just to cleanse the pallet from all of the grease. 😉 These lettuce wraps, or Peppered Turkey Pinwheels are the perfect solution for a healthy lunch or snack.
You can’t go wrong with something that is delicious without any real work. These pinwheels are seriously fast to prepare and by sticking a little toothpick in them you’ve not got a popable snack. Of course you could make a whole wrap, as seen in the background, it’s entirely up to you.
Just a few simple ingredients and of course you are welcome to change anything up to your own liking. The Laughing Cow Cheese is my absolute favorite part about the whole thing. I chose to try out the garlic and herb just to add another layer of flavor without any work. It’s creamy, flavorful and healthier than many other options out there, so you can feel better about it. Plus, I love to sneak a little Dairy in wherever I can. 😉
Can Pinwheels Be Made With Spinach Tortillas?
You can make pinwheels with any flavored flour tortilla.
They could be made with corn tortillas also, but corn tortillas are not as soft and do not roll as easily.
What Kind of Lettuce is the Healthiest?
The darker the color of the lettuce, the healthier it is.
Spinach is actually the healthiest kind of greens.
Red Leaf lettuce is a good, healthy choice, as is Romaine.
Are Cucumbers Good For You?
Cucumbers are low in calories and contain a good amount of water and soluble fiber.
The flesh of cucumbers is rich in vitamin A, vitamin C, and folic acid.

Ingredients
- 1/2 Head Lettuce, The darker the lettuce the better for you. This was red leaf, washed and dried
- 1-3 Wedges Laughing Cow Garlic Herb Cheese
- Peppered Turkey , from your local deli
- 1 Cucumber, sliced long
- 1-2 Tomatoes
Instructions
- Spread a little cheese on each leaf of lettuce, top with turkey, tomato and cucumber.
- Carefully, and gently roll the lettuce closed and secure with a toothpick.
- If your lettuce has a thin leaf you'll want to make sure to only poke the toothpick once to prevent tearing.
