I love the holidays!! Can you believe it’s already that time of year again? Yes, more money gets spent, lives get busier and we all sweat through hot kitchen days to prepare yummy food, but it’s also so magical! I love the yummy snacks, I love the awesome movies that come out and the family time. And what better snacks for family time than pumpkin spice marshmallow popcorn?! These pumpkin spice marshmallow cookies were so crazy good we had no choice but to experiment again and it paid off!
There she is. The yummiest marshmallow popcorn out there. You probably should pin it before you forget. Just sayin’. 🙂 And we actually do our popcorn a little different. We don’t buy the already boxed popcorn, no real reason other than we’ve always bought the huge bag of just kernels and then we use this paper bag method from Chocolate Covered Katie.
After you pop your popcorn add the marshmallows, brown sugar, and butter to a large glass bowl and microwave it at 30 second intervals, stirring between until it’s totally smooth.
Then pour everything over the popcorn. Now, this bowl that I used is too small so make sure you use a much bigger bowl. Then carefully fold the marshmallow sauce all over the popcorn. This is why a larger bowl is necessary, the marshmallow sticks to the popcorn and makes it tricky to stir so the smaller the bowl the more spillage. Then enjoy! Seriously, can’t you just picture a big bowl of this and a movie during the holidays? It’s perfect, and addicting!
Can You Pop Any Dried Corn?
Regular sweet corn, and field corn will not pop when dried.
Only pop corn will pop.
How Long Will Popcorn Kernels Keep?
When stored in a cool dry place, popcorn kernels will keep for 2 years.
Is Pumpkin Good For You?
Pumpkin has a lot of nutrients that are good for the body.
Pumpkin is high in fiber, potassium, and vitamin C, all of which are good for the heart.

Ingredients
- 1/3 cup popcorn , kernals, microwaved in a paper bag for 90 seconds
- 1/4 cup butter, unsalted
- 1/2 cup brown sugar
- 2 cups marshmallows , pumpkin spice, mini, or 24 regular
Instructions
- In a large glass bowl add the butter, marshmallows and brown sugar.
- Microwave for 30 second intervals, stirring between until totally smooth.
- Pour over the popcorn and fold until the popcorn is entirely coated, the bigger the bowl the better.
- Enjoy!

Is there a way to make this pumpkin spice without the pumpkin spice marshmallows? Can I just use regular marshmallows and add “pumpkin spice” spice to it? How much would you recommend? I’d love to make this for my upcoming “sugar and spice” baby shower, but those pumpkin marshmallows are out of season!
