It seems like everyone is telling me about some Asian Chicken Salad that they had recently and all of them include pasta. What? Where have I been? I had no idea that people put pasta with lettuce etc. I decided the other night that we pretty much needed to try out this crazy pasta/lettuce salad and guess what, it was good, Sesame Ginger Chicken Salad! I’ll now be experimenting with many more pasta/lettuce salads. It was light and the chicken was juicy and flavorful. I love that it was easy going  and because of the pasta it filled you up rather quickly too.

Romaine lettuce is nutritionally superior to Iceberg lettuce.

Romaine is packed with vitamins A and C, and good amounts of folic acid and magnesium.

The best way to tell if any pasta is done is to taste it.  

Pasta should be cooked to al dente, or firm to the bite.

Ingredients

  • 3 Cups Romaine Chopped
  • 3 Carrots sliced
  • 8 oz Bow Tie pasta cooked
  • 1/3 Cup Canola Oil
  • 1/3 Cup Vinegar Rice
  • 1/3 Cup Soy Sauce Low Sodium
  • 2 Tablespoons White Sugar
  • 2 Tablespoons Brown Sugar
  • 3/4 Teaspoon Ginger Ground
  • Dash of Black pepper
  • 1/4 Cup Sesame Seeds Toasted
  • 2 Chicken Breasts cooked and cubed
  • Toasted Sesame Seeds for garnish

Instructions

  • Mix Canola oil through toasted sesame seeds together in a jar.
  • Toss with all other ingredients and serve warm or cold.
