MMMMMM Summer Salads are the best aren’t they? I know we love them. This shredded chicken and strawberry citrus salad is a cinch and you feel good after eating it since it isn’t loaded with fat. The citrus dressing is like a little splash of sunshine in your mouth. So light and flavorful without a lot of heavy fillers to weigh it down and oh how I love how these red, juicy strawberries! YUMM! They add just the right amount of sweet  and the croutons are the perfect thing to add a little crunch. Plus, aren’t the strawberries just gorgeous in this salad? They really add a lot of much needed color to brighten things up and make this look so tasty! Food should not only taste good and be good for you but it should look good too. Am I right? Strawberries are just perfect for this! Using romaine, red leaf, and spinach really helps to not only add extra nutrients but it also brings different textures together which make this whole salad really come together into a meal instead of just a side dish.

Is Romaine Lettuce Healthier Than Iceberg?

Romaine is much healthier than Iceberg lettuce.

Romaine is packed with nutrients, including vitamins K, A, and C, and also good amounts of folate and magnesium.

Are Strawberries Good For You?

Strawberries are packed with vitamins and fiber, and they have high levels of antioxidants.

Strawberries are also a good source of manganese and potassium.

Does Spinach Have Vitamin C?

Spinach does contain a good amount of vitamin C.

Spinach also contains folate, niacin, riboflavin, and potassium.

  • Romaine
  • Red Leaf Lettuce
  • Spinach
  • Strawberries sliced
  • Foccacia Croutons
  • Citrus Dressing
  • Shredded Chicken


  • Roast a whole chicken and let cool.
  • Shred the meat and set aside.
  • Wash your greens and fruit and dry.
  • Throw everything together and top with THIS Citrus Dressing that I got from an old neighbor back in college. You will LOVE it!

  • Sounds yummy. I make a similar salad with a poppy seed vinegrette. I'll put it on here sometime. I would add a suggestion. Chunk up some Asiago, Fresh Parmesan, or Mizzithera (not sure how this is spelled) to toss in. Yummy!!
