Sweet Potato Fries
Until recently I haven’t really enjoyed sweet potatoes. I think my last pregnancy helped. I still don’t looooove them in some dishes, but I do love Savannah’s sweet potatoes, and sweet potato fries. We had one sad little sweet potato one day and I was trying to figure out a meal to incorporate it. We decided on Chik Fil-A style chicken (see thursday’s post) and sweet potater fries. I threw in some pumpkin pie spice on a whim and it was pretty much genius. They were crispy on the outside, tender and fluffy on the inside and ohhhh that warm spice from the pumpkin pie seasoning. It’s delicious. I’m sold. Totally sold.
Yes, you are correct that there is no dipping sauce shown. Well, I made them to go with the chicken so you’ll see them tomorrow. However, one of them we only ate with the fries because it just went together better. You guys, the dipping sauce is so flippin’ good with these. I tell you no lies.
Sweet Potato Fries
- 1/4 Cup Mayo
- 1/4 Cup BBQ sauce (Sweet Baby Ray’s in our fave)
Sweet Potater Fries
- 1/4 Cup Canola Oil
- 1 Teaspoon Pumpkin Pie Spice
- 1/2 Teaspoon Kosher Salt
- 2 Sweet Potatoes, peeled and cut into fries
Place the fries and oil in a bowl and top with spice and salt. Toss to coat.
Place foil on a cookie sheet and place a baking rack on top. Spread the fries over the rack and bake at 400 for 30 min or until tender.
*You must use the rack so the air can circulate around the fries so they aren’t soggy*
