Hi friends! I’m bringing back these delicious Vegetarian sweet potato tostadas from a few years ago because they are easy, delicious and you all asked for more healthy vegetarian recipes. Boom. Now let’s read on.
 

Winter is going to be the death of me. I’m so sick of the snow and cold wind. PLUS I need to get a light so that my pictures will turn out better when it’s too dark to go outside. It’s so annoying. Ok, enough. I’ll stop complaining. Let’s talk about vegetarian sweet potato tostadas instead.

These tostadas were so easy and delicious. I don’t usually like sweet potatoes, but the husband does so I gave this a whirl. I loved the little spice and kick from the cumin with the warm, tender sweetness of the sweet potato and all of it cooled off by the creamy avocado. Totally worth trying. It’s light, but filling. Fast, but delicious.

Vegetarian Sweet Potato Tostadas

Ingredients

  • 1 Can Black Beans rinsed
  • 1 Sweet Potato peeled and chopped
  • 1 Tablespoon Olive Oil
  • 1 Avocado chopped
  • 2 Teaspoons Cumin to taste really
  • 1 Teaspoon Chili Powder
  • Limes for serving
  • Corn Tortillas

Instructions

  • Place the chopped sweet potato on a cookie sheet and drizzle the olive oil over the top.
  • Place in a 400 degree oven for 12-15 min or until tender. (Keep checking them, and toss them half way through baking time. The amount of time depends on the size you cut them. I did about 1" pieces)
  • Heat the black beans on the stove with the cumin over medium- low heat.
  • Heat corn tortillas in a skillet over medium heat with a little oil to help them crunch up.
  • Heat on each side until slightly browning.
  • Throw on all of the other ingredients and enjoy!
