We are currently working on our garden and it is not going so well. Well, we are gardening with our good friends, and some of their stuff is looking great, but our herbs and peppers either aren’t growing or are looking limp. Yes, they are getting plenty of water, no the soil is not very good, and we are working on that, but any other tips for us? I really can’t wait to be eating fresh produce all summer long. Tarragon Chicken Salad
Tarragon Chicken Salad
- 1 1/4 Cup Chicken cooked and shredded (or 1 can of Chicken)
- 1/3 Cup Light Mayo
- 1 Teaspoon Fresh Tarragon chopped
- 1 1/4 Teaspoon Dijon Mustard
- Salt and Pepper to taste
- 3 Slices Bacon cooked and chopped
- 1 Avocado chopped
- 2 Leaves Romaine Lettuce
- 1 Tomato Chopped
- In a small bowl, combine the mayonnaise, fresh tarragon, dijon mustard, and salt and pepper.
- Add the chicken and carefully fold together.
- Add the remaining ingredients, folding everything in to evenly distribute all ingredients.
- Serve on good wheat bread or pita.
