Tastes Like Lasagna Soup

 A few years back my husband and I were able to travel to New York and do two episodes for Paula Deen’s show, Paula’s Party. It was seriously so much fun. We got to see a bunch of fun people on the show like, Carson Kressley, Cheri Oteri, Jason Priestly and more. It’s probably one of our favorite memories. On one episode Paula made Tastes Like Lasagna Soup and oh my goodness it smelled amazing. We were so bummed we didn’t get to taste it! When we got back we hurried and made the soup and it’s become one of our favorites.
 

I thought I would show a quick picture of what Tastes Like Lasagna Soup looks like under all of the cheese. It really is so yummy and so easy.

Usually I’m all about letting the soup sit under the broiler for a while so that the cheese starts to brown a little, but it was so late by the time my husband got home from work that we were starving so I only let the cheese melt.

Can Lasagna Be Prepared Ahead?

You can assemble lasagna up to the point of baking it.

Cover with foil, crimping the edges of the pan tightly.

Refrigerate up to 3 days before baking.

Do Lasagna Noodles Have To Be Cooked Ahead?

You can use regular lasagna noodles without boiling them first. 

But, you will need to add extra moisture to the lasagna so there will be enough liquid to cook the pasta.

How Long Will Homemade Soup Keep?

Homemade soup will keep 3-4 days in the refrigerator.

Soup should be stored in a container with a tight fitting lid.

Ingredients

Recipe By Paula Deen

  • 1 Pound Ground Chuck
  • 1 Onion Chopped
  • 1 Bell Pepper Green, Chopped
  • 32 oz Chicken Broth Low Sodium
  • 2 cans Tomatoes 14.5 oz Petite Diced
  • 15 oz Tomato Sauce
  • 1 Tablespoon Brown Sugar
  • 2 Teaspoons Italian Seasoning
  • 1/2 Teaspoon Salt
  • 2 Cups Lasagna Noodles Broken
  • 3/4 Cup Parmesan Fresh Grated
  • Cheese Shredded Mozzarella
  • Baguettes to serve with soup

Instructions

  • In a large Dutch Oven, combine ground chuck, onion, bell pepper and garlic.
  • Cook over med-high heat 8-10 minutes stirring occasionally until meat is browned.
  • Drain well.
  • Stir in broth, tomatoes, tomato sauce, brown sugar, Italian seasoning, and salt.
  • Bring to a boil over medium-high heat;
  • Reduce heat and simmer 15 minutes.
  • Add noodles and simmer until the noodles are tender.
  • Add Parmesan cheese.
  • Pre heat broiler.
  • Ladle soup into oven safe bowls, top with cheese and place under broiler until cheese is melted.

Notes

I always add a little extra broth to mine because the noodles absorb so much of it*
**You can place baguette slices or croutons on the soup with the cheese and place under the broiler, but we prefer to brush the bread with a little olive oil and broil until starting to brown and then eat it with the soup.
