I am not the biggest fan of lunch. It’s lame. You can only make so many sandwiches, salads and I get so tired of the same ol’ thing. Or I did. Last year I posted about this honey avocado dressing that we are obsessed with thanks to my friend, Jeana, and I never get tired of it. Plus, I made the best turkey blt wrap with honey avocado dressing the other day and it was so good we actually had it again for dinner. So fly away lunch time blues, I’m done with you!
And speaking of flying, I’m not a fan of birds. I think some are beautiful, but I’m still not a fan. Especially the blasted little bird family that begins chirping before the sun comes up. Literally. Hello 4am. Actually I should love birds. One stuck up for me once and I swear it was like a little girl miracle. When I was in elementary school I was a scrawny little thing that quite a few of the kids loved to be mean to. Isn’t it so awful how mean kids can be? Ok, so this one boy was such a punk. In fact, he was all through high school as well. And it used to really get under my skin, but now I realize the poor kid must have had a lot going on to make others feel bad. But one day, well the world flipped around for a moment.
We were walking home one day and he was chucking rocks at my ankles while I walked and calling me “chicken legs”. I was so done. I remember holding on tight to my backpack straps, squeezing them tighter and tighter to resist crying as that would only make it worse. I was trying to think of other things when I heard a crow squawking in a tree up ahead. It was HUGE! I seriously was a little taken aback for a moment by the size of the ugly bird. Another rock hit my ankle and I started praying that he would go away and just let me get home. Another rock hit. One after another and by the time I got to the tree the tears were welling up in my eyes. And then it happened.
That gosh darned bird flew down out of the tree and pecked him on the head! And not just once, multiple times! I ran the rest of the way home, full of a mixture of emotions. Hot dang, I wanted to be so glad but I also felt bad for him. We spent the rest of our school years at the same school and he never became kind or even reasonable to be around, but at least I had that moment of escape. 🙂

The Best Turkey BLT Wrap
Ingredients
- [Honey Avocado Dressing], click the link
- 6 Mini Bell Peppers, sweet peppers, chopped
- Honey Roasted Turkey, sliced thin
- 8 slices Bacon, cooked
- 1 Cucumber, chopped
- Baby Spinach
- Colby Jack Cheese, grated
- 4 Fresh Tortillas
Instructions
- Prepare the sauce as directed, set aside.
- Heat a pan over medium heat and drizzle in a little olive oil.
- Add the peppers and saute until tender.
- Remove from the heat and in a nonstick skillet over the same heat cook the tortillas.
- Once they are cooked, sprinkle with the cheese and allow it to melt.
- Place the tortilla on a plate and spread a little sauce all over it.
- Layer the turkey, peppers, spinach and cucumbers on the tortilla and roll the wrap.
- Enjoy!
