Finding quick and healthy options for breakfast and snacks is often challenging. I’m Ashley from Spoonful of Flavor and today I am sharing one of my favorite healthy options for snacking. Tropical Fruit Yogurt Parfaits are perfect for summer because they are a refreshing treat with a taste of the tropics. I love parfaits because they are easy and can also be made ahead of time in small servings. I make them the night before and eat them for breakfast the next day. They are also great to snack on when you are on vacation and need a healthy treat. Kids and adults will love them!
Simple and fresh flavors combine to create a snack that is tasty and healthy. The agave-lime yogurt is a perfect complement to the tropical fruit flavors. My favorite thing about these parfaits is the toasted coconut. The toasted coconut provides a slightly crunchy addition to the tropical parfait.
Mango, banana, pineapple and kiwi are my favorite fruits to layer in these yogurt parfaits. But sometimes I like to mix it up and use papaya, guava or oranges for a unique tropical flavor. These parfaits can be adapted depending on your taste, so feel free to add your favorite fruit to produce a refreshing and healthy tropical breakfast or snack. You can even add granola for an extra crunchy treat!

What Is The Difference Between Yogurt and Greek Yogurt?
Greek yogurt is strained three times, so most of the liquid is removed.
That is what gives Greek yogurt its creamy texture and stronger flavor.
Because Greek yogurt is more concentrated, it contains more protein than regular yogurt.
How Long Will Yogurt Last?
Yogurt will last 1-2 weeks past the “sell by” date.

Tropical Fruit Yogurt Parfait
Ingredients
- 3 cups Greek yogurt
- 3 tablespoons agave syrup, or honey
- juice from one lime
- 1 cup diced mango
- 2 medium bananas, sliced
- 3/4 cup diced kiwi
- 1 cup diced pineapple
- 1/3 cup toasted coconut
Instructions
- Combine the yogurt, agave and lime juice in a small bowl.
- Whisk to blend.
- Using four 16-ounce glasses, layer the yogurt-agave mixture, fruit and toasted coconut, diving evenly among the glasses.
- Serve immediately.
