Simple Roasted Garlic Veggies

Macaroni and Cheese is a classic, but what side do you serve with mac n cheese? Our Simple Roasted Garlic Veggies are the perfect side dish!!


  • 1 1/2 Large Heads of Broccoli chopped
  • 2 1/2 Cups Baby Carrots
  • 3 Cups Brussels Sprouts halved
  • 2-3 Tablespoons Olive Oil
  • 4 Cloves of Garlic minced
  • 2 Teaspoons Kosher Salt
  • 1/2 Teaspoon Fresh Ground Black Pepper
  • 1/4 Cup Parmesan Cheese grated


  • Preheat the oven to 425 degrees.
  • Place the veggies on a cookie sheet and drizzle with olive oil, sprinkle with garlic, salt and pepper. Toss to coat.
  • Bake for 25 minutes or until the veggies are soft and beginning to brown.
  • Remove from the oven and sprinkle with parmesan cheese.
  • Serve immediately with Stouffer's Macaroni & Cheese.
