Ingredients

  • 2 1/3 cups all-purpose flour
  • 2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 tsp ground nutmeg
  • 1/2 tsp ground cinnamon
  • 2 cups eggnog
  • 2 large eggs
  • 3 tablespoons butter melted and cooled
  • 3 tablespoons brown sugar
  • 1 tsp vanilla extract

Instructions

  • Preheat waffle iron according to the manufacturer's instructions.
  • In a large bowl whisk together the flour, baking powder, baking soda, salt, ground nutmeg, and cinnamon.
  • In a medium bowl whisk together the eggnog, eggs, melted butter, brown sugar and vanilla extract.
  • Gently fold the eggnog mixture into the dry ingredients. Be careful not to over mix - a few lumps is ok.
  • Pour about 1/4 cup batter into each square well of the waffle iron and cook for 3-5 minutes, or until edges are golden. Repeat with the rest of the batter.
  • Serve with whipped cream, a sprinkle of nutmeg and syrup.
