Pineapple Fajitas

  • 2 skinless boneless chicken breasts diced
  • garlic powder to taste
  • crushed red pepper to taste
  • 2/3 Cup diced mushrooms
  • 1 1/2 Cups diced pineapple
  • 2/3 Cup sliced red bell pepper
  • sour cream
  • mango salsa
  • cilantro
  • Olive Oil


  • Saute the chicken in Olive oil with garlic powder and crushed red pepper until golden brown.
  • Set aside.
  • Saute mushrooms, pineapple and bell pepper.
  • Mix chicken back in.
  • Serve in tortillas with sour cream, mango salsa, and cilantro.
  • Delicious!
