White Bean Turkey Chili

  • 1-2 Tablespoons Olive Oil
  • 1 Sweet Onion chopped
  • 5 Small to Medium Cloves of Garlic Minced
  • 1 1/2 lbs Lean Ground Turkey
  • 1 1/2 Teaspoons Kosher Salt
  • 1 tablespoon plus 2 teaspoons Ground Cumin
  • 2 1/2 teaspoons Fennel
  • 1 tablespoon Oregano
  • 2 1/4 teaspoons Chili Powder
  • 3-4 tablespoons Flour
  • 2 -15 oz Cans Low-Sodium Chicken Broth
  • 2-15 oz Cans Great Northern Beans drained and rinsed
  • 1 Large Bunch of Spinach chopped into large pieces
  • 1 Can Corn drained
  • pepper to taste

Instructions

  • Heat the oil in a pot and add onion.
  • Cook the onion until soft and translucent, about 4 min.
  • Add garlic and cook another minute.
  • Add ground turkey and seasonings.
  • Stir and let cook about 6-10 min or until cooked through.
  • Add remaining ingredients and simmer for 1 hour.
  • Serve with parmesan cheese and parsley.
