Make it from scratch! It is full of fresh herbs and all the classic stuffing ingredients.
Ingredients
1loafBreadcountry bread, about 12 cups
1/4CupButterplus a little more for the dish
1largeShallotminced
2stalksCeleryminced
3clovesGarlicminced
1/2CupFresh Parsleychopped
1tablespoonSagefresh, chopped
1tablespoonThyme Leavesfresh, minced
1tablespoonSavory Leavesfresh, minced
1tablespoonRosemary Leavesfresh, chopped
1teaspoonKosher Salt
Black Pepperfreshly ground
2 1/4CupsChicken or Vegetable Brothlow sodium
Instructions
Cut the bread into 1/4-1/2" cubes and leave out overnight to dry out.
Preheat the oven to 450, place the bread on a baking sheet and drizzle oil over the bread. Bake for a few minutes until golden.
Set aside.
Preheat oven to 350º and butter a 9x13" dish. In a large skillet over medium heat, melt butter. Add the shallots and celery and cook until soft and fragrant, about 6 minutes. Stir in garlic, parsley, sage, thyme, savory and rosemary and cook until fragrant, 1 minute more. Season with salt and pepper to taste.
Place bread in a large bowl and veggies and herbs. Toss to combine. Gently stir in the chicken broth. Season generously with salt and pepper and toss until completely coated.
Transfer the mixture to a buttered baking dish and cover tightly with foil. Bake until cooked through, 45 minutes, then remove foil and cook until bread is golden, about 15 to 20 minutes.
Serve with a fresh chop of parsley garnish.
Notes
Store left over stuffing in a covered container in the refrigerator. Stuffing will keep for 4-6 days.If you are making this stuffing ahead, stop after you wrap the baking dish in foil and store it in the refrigerator until you are ready to bake it and bake it as instructed.You can also completely bake the stuffing ahead of time and then let it cool completely. Cover it tightly with foil and store it in the refrigerator. Reheat it in the oven at 350 degrees until warmed through. Both methods will turn out about the same. It just depends on what fits better with your cooking schedule.
