Ingredients

  • 2 Handfuls Cilantro Leaves
  • 1/4 Cup Extra Virgin Olive Oil
  • 2 Tablespoons Lime Juice
  • Pinch Salt and Pepper to taste
  • 1 Cup Pineapple chopped
  • 2 Tablespoons Red Onion minced

Instructions

  • Place the cilantro, olive oil, lime juice, salt and pepper in a blender and pulse until well combined like a pesto.
    2 Handfuls Cilantro Leaves, 1/4 Cup Extra Virgin Olive Oil, 2 Tablespoons Lime Juice, Pinch Salt and Pepper
  • Remove to a bowl and toss with pineapple and red onion.
    1 Cup Pineapple, 2 Tablespoons Red Onion

Notes

Store Chimichurri in a jar with a tight fitting lid in the refrigerator for about 3 months.
