Instructions
Place the tomatoes on a baking sheet and drizzle with olive oil, salt, pepper, basil, and garlic.

4-6 Leaves Basil,
1 Clove Garlic
Roast in the oven at 425 for 30 minutes.
Remove and let cool slightly.
Place the tomatoes in a blender and puree.
Set aside.
Heat a large sauce pot over medium heat and add the sausage. Cook until done through, about 6-8 minutes.
1/4 Pound Sausage
Remove the meat to a dish and leave the grease in the pot.
Add the sage and carrot and cook for 2-3 minutes.

Add the meat, tomatoes and cream cheese to the pot and continue to cook until the cream cheese is completely melted.
2 Tablespoons Cream Cheese
Add the heavy cream and salt and pepper to taste.

Place the sauce in small baking ramekins or dishes.
Crack an egg on top and place in a 400 degree oven for 14-16 minutes or until the egg is cooked, but not a hard yolk.
6 Eggs
Let cool slightly and enjoy!

Notes
Store left overs in the refrigerate and reheat in 350 degree oven for 15 minutes.
