Instructions
Heat the oven to 350 degrees.
In a small saucepan over medium heat, add the butter until melted, and then the mushrooms and garlic.
3 Tablespoons Butter,
1 Clove Garlic,
1/2 Cup Minced Mushrooms
Stir occasionally for 1-2 minutes then quickly whisk in the flour.
1/4 Cup Flour
Allow to cook for 30 seconds more and add the ranch, milk and broth, whisking until it begins to simmer.
2 Tablespoons Ranch Seasoning Mix,
1 Cup Milk,
1/2 Cup Chicken Broth
Cook 2-3 minutes or until thickened.
Spray an 8x8" baking dish with nonstick spray then add the chicken, veggies, additional broth, water, sauce and rice.
2 Cups Cooked Chicken,
1 Cup Sliced Carrots,
1 Cup Broccoli,
1 Cup Chicken Broth,
1 Cup Water
Stir to combine and bake for 1 hour and 15 minutes or until rice is tender.
1 Cup White or Brown Rice
Remove from the oven and stir in the peas and any additional seasoning, sampling to get the rice flavorful.
1 Cup Frozen Peas *optional,
Salt and Pepper to taste
Top with cheese and bake for another 15-20 minutes or until the cheese is bubbly. Serve immediately.

Notes
Store left overs in the refrigerator for 3-4 days.
