Heat oil in a large skillet over medium-high heat.

Add the sausage, peppers, and onion.
12 Ounces Smoked Sausage, 1 Red Bell Pepper, 1 Yellow Bell Pepper, 1/2 Red Onion
Sprinkle with 1 teaspoon Cajun seasoning and let it cook, without stirring, for 4-5 minutes until browned, and then stir, allowing the other side of sausage and veggies to brown.
4 teaspoons Cajun Seasoning
Remove from the pan onto a plate.
Place the butter in the pan to melt.
1 Tablespoon Butter
Saute garlic for 30 seconds or until fragrant.
3 Cloves Garlic
Mix in the flour and cook for 2 minutes.
3 Tablespoons Flour
Whisk in the chicken broth, cream, and 2-3 teaspoons Cajun seasoning (depending on how much heat you want).
4 teaspoons Cajun Seasoning, 1 Cup Chicken Broth, 1/2 Cup Half and Half Cream
Stir in the tomatoes and cook until thickened (about 2-3 minutes).
1 Can Diced Tomatoes
Mix the sauce in with the pasta.
Add pasta water as needed to achieve desired consistency.
Add the sausage and veggies and toss until combined.
