Cover and cook stirring occasionally for 4-6 minutes or until very slightly softened.
Meanwhile, in a small bowl, combine cornstarch and water.
1 Tablespoon Cornstarch, 2 Tablespoons Water
While stirring, drizzle in the cornstarch and continue to cook until apples are soft and filling is thickened. Let bubble for one minute. Cool completely.
Store in an airtight container for 2 weeks in the fridge or one month in the freezer.
