Aglio Seasoningfrom Trader Joes or red pepper chile flakes
Instructions
Place a chunk of parmesan in a blender and pulse until you make the parmesan cheese like a powder. This helps it better stick to the pasta.
½ Cup Fresh Parmesan Cheese
In a large dutch oven with a lid, heat to medium heat. Add in olive oil and garlic and sauté until fragrant, about 30 seconds.
2 Tablespoons Olive Oil, 3 Cloves Garlic
Pour in the pasta, and stir gently until beginning to brown slightly. You may need to turn down to medium low heat if it's all browning quickly.
1 ½ Cups Ditalini Pasta
Pour in the chicken broth and season with a little salt. Turn the heat up to high to bring to a boil. Once boiling, turn down to low and cover with a lid.
2 ½ Cups Chicken Broth
Allow it to cook covered for about 9-10 minutes or until pretty much all liquid is gone and just a little remains.
Remove the lid and stir the pasta to release from the bottom and from each other.
Slowly pour in the heavy cream and stir the pasta as it continues to simmer, about 30-60 seconds.
⅓ Cup Heavy Cream
Remove from the heat and add in 3-4 tablespoons of butter, stirring as you add it.
4 Tablespoons Unsalted Butter
Now add the parmesan cheese and stir.
Season with salt and pepper and garnish with parsley, more cheese and the aglio seasoning for a kick!
