Instructions
Cook the Pasta
Heat a large pot of salted water over high heat.
Add the pasta to the boiling water and cook until the pasta is
past al dente
.
16 Ounces Pasta Shells
Drain the pasta, saving the water in the pot.
Rinse the pasta with cold water to stop the cooking.
Transfer the pasta to a large bowl and allow to cool.
Cook the Veggies
Add the frozen peas and the asparagus to a steamer basket over the pot of boiling water and cook until they become bright green, 2-3 minutes.
1 Cup Frozen Peas,
12 Asparagus Spears
Remove from the heat, rinse with cold water to stop the cooking and place on top of the pasta along with the green onions and avocado.

Make the Dressing
Add all the dressing ingredients to a blender jar and blend until smooth.
1 Cup Baby Spinach,
1 Cup Fresh Basil,
2 Cloves Garlic,
1 Shallot,
1 Lemon,
2 Lemons,
¼ Cup Olive Oil,
¼ Cup Cashews,
⅓ Cup Parmesan Cheese,
2 Tablespoons Rice Vinegar
Make the Salad
Toss dressing, pasta and veggies and enjoy!
