These pancakes have no flour, no butter or oil, and are filled with spinach, greek yogurt which gives a little more protein, potassium from the bananas, oatmeal for a healthy heart, and egg whites for more protein and skipping out on the cholesterol from the yolks.
Place everything but the egg whites in a blender and blend until smooth.
1 Banana, 1 Container Plain Yoplait Greek Yogurt, 1 Cup Spinach, 1 Cup Old Fashioned Oats, 1 Tablespoon Sugar, 2-3 Tablespoons Milk, 1/2 teaspoon Cinnamon, 1/2 teaspoon Vanilla, 1/4 teaspoon Salt
Meanwhile, in a standing mixer or large bowl (see note for alternate instructions) add the egg whites and whip until stiff peaks form.
6 Egg whites
Carefully fold 1/3 the egg whites into the batter and then add the remaining egg whites.
Heat a pan to medium heat, spray with nonstick spray and add 1/3 cup batter, cooking until bubbles form and begin to pop, flip and continue cooking 2 minutes or until set.
These pancakes are slower cooking due to the egg whites, be patient.
Notes
Don't have time to whip the egg whites? No worries, just place them in the blender and cook as normal. The texture is different but equally delicious!
