Healthy Pink Pitaya Blender Pancakes

Ingredients

  • 2 Cups Oats
  • 2 teaspoons Baking Powder
  • 1/2 teaspoon Baking Soda
  • 1/2 teaspoon Salt
  • 3 1/2 teaspoons Pitaya powder
  • 2 Eggs
  • 1/2 Banana
  • 1 1/4 Cups Milk whole milk is best in this recipe
  • 2 Tablespoons swerve sweetener  (honey or sugar can be used)
  • 1 Tablespoon Cottage Cheese low fat

Instructions

  • Place oats in a blender and blend until a smooth flour is formed. 
    2 Cups Oats
  • Add all remaining ingredients and blend until smooth. 
    2 teaspoons Baking Powder, 1/2 teaspoon Baking Soda, 1/2 teaspoon Salt, 3 1/2 teaspoons Pitaya powder, 2 Eggs, 1/2 Banana, 1 1/4 Cups Milk, 2 Tablespoons swerve sweetener, 1 Tablespoon Cottage Cheese
  • Set aside to rest for 5 minutes. 
  • Heat a skillet to medium heat and spray with nonstick spray. Pour batter into circles and cook until bubbles form and pop. Flip and continue to cook for 1-2 minutes or until set. 
  • Remove and enjoy with syrup or a white chocolate drizzle (we dyed ours pink! (just white chocolate melted with pink food coloring!)

Notes

Pancakes can be frozen for up to 3 months.
