Preheat the oven to 425 degrees F and line a baking sheet with foil.
Brush the foil with oil.
Prepare the mango salsa and set aside.
In a food processor or blender, pulse the macadamia nuts until they are ground down. Do not mix or it will turn into a spread. The warmer they get being blended the more likely it is to happen.
1 Cup Dry Roasted
In a shallow dish, mix the nuts, bread crumbs, salt and pepper, and flour.
Salt and Pepper, 1 Cup Panko Bread Crumbs, 2 Tablespoons Flour
Set aside.
Sprinkle salt and pepper on each side of the fish.
2 Mahi Mahi Filets
In a shallow dish, whisk together the coconut milk and lime juice.
1/2 Cup Coconut Milk, 1 Tablespoon Lime Juice
Dip the fish on both sides and then put straight into the nut mixture.
Flip the fish over and press the nuts into the fish creating an even coating.
Place the fish on the baking sheet and bake for 10-15 minutes or until white and flaky.
