Instructions
Place the oats in a large bowl and pour boiling water over the top.
1 Cup Oatmeal,
2 Cups Water
Let stand 15 minutes or until luke warm.
Dissolve yeast and sugar in 1/4 Cup warm water.
1 pkg Yeast,
1 teaspoon Sugar,
1/4 Cup Water
Add molasses, salt, and butter or veggie oil.
1/2 Cup Molasses,
2 Teaspoon Salt,
1 Tablespoon Butter or Oil
Stir to combine then stir in the oatmeal mixture.
Work in the flour until the dough just comes together.
4-5 Cups Flour
Place on a floured surface and knead until smooth.
Let rise, covered with a towel until doubled (usually about an hour), punch down and form into two loaves and place in two 9x5 bread pans.
Let rise until doubled again with a towel gently over the bread pans.
Bake at 375 for 40-45 min or until done.
You can usually lightly tap the top and the bread should be sounding hollow when it's done.
