Place the tomatoes on a baking sheet, cut side down. Place the oven rack in the highest position and slide the tomatoes in. Cook only until the tomatoes begin to char then remove.
3/4 Cup Cherry Tomatoes
Toast all four pieces of the bread (either in the broiler or a toaster). Butter one side of each slice, set aside.
4 Slices Seven Grain Bread, 2 Tablespoons Butter
To Make the Sandwich
Spread the inside of each bread with the spicy mayo.
Place the cheese slices followed by the tomatoes, sprouts, micro greens and arugula.
4 Slices Young Manchego Cheese, 1/4 Cup Fresh Sprouts, 1/3 Cup Micro Greens, 1/3 Cup Arugula
Now, add the sliced avocado, red onion, and the top piece of bread. Enjoy!

Spicy Mayo
Make the mayo by whisking all ingredients together and set aside.
1/2 Cup Mayonnaise, 3 Dashes Hot Sauce, 1 teaspoon Smoked Paprika, 1/4 teaspoon Chili Powder, 2 teaspoons Juice from Pickled Onions

I like to just throw my bread in at the same time as the tomatoes, flipping them half through, or just do tomatoes and use a toaster for the bread.
